Ma il burro è anche ingrediente letteralmente insostituibile per moltissime preparazioni di pasticceria: con la sua morbidezza e il suo sapore avvolgente regala caratteristiche uniche a biscotti, impasti di base (pasta frolla, pan di Spagna), dolci lievitati tipici (panettone, pandolce), creme e glasse. In cucina il burro si utilizza per i risotti, per saltare o rosolare verdure, pesci e alcune carni (brasati, stufati) o ancora per legare salse profumate.

Would "scented sauce" be a correct translation?
