Nel discorso gastronomico, quale è il ruolo degli alimenti, ed in particolare di quelli ritenuti o mitizzati come identitari? Più che agli alimenti bisogna fare riferimento ai processi di decostruzione del discorso gastronomico che può rendere evidenti gli elementi specifici, spesso espressi in modo inconscio anche attraverso linguaggi mitici, con i quali è possibile ricostruire un discorso identitario sociale, che inoltre varia con il tempo ed è diverso da luogo a luogo.

I think you have to adapt the term to the context every time you encounter it, so there is not one only translation

I know it sounds pretentious, but the Italian is pretentious.

I think you have to retain the literal meaning because the Italian phraseology has been deliberately chosen - it talks about constructing and deconstructing gastronomic discourse and the language it uses. However, to avoid repeating discourse too much, you could do as Tom has done and leave it out the first time it comes up.

Maybe it's not fair to say that the Italian is pretentious, but it's certainly rarefied, and "discorso" has a specific meaning which needs to be preserved in the translation.
