Italian term or phrase: Insalatina scottata all'arancia
The complete menu entry is "Insalatina Scottata All’Arancia
con dadolata di pesci, olive e capperi".

The recipe looks like this:
http://www.tripadvisor.ie/LocationPhotoDirectLink-g580214-i3...

The owner told me the "insalatina" is a mix of salads, green vegetables and garden rocket (rucola).

"Scottare" should be "to half-cook, to scald", but how would you say the whole concept?

Grazie 1000 for any suggestion!

Parboiled / blanched leaves (or greens) with orange

Explanation:
I have always known "parboiled" to mean quickly plunged in boiling water and left only for a short period of time. Otherwise "blanched" could work.

"What is blanching and how is it different from parboiling?..."
http://howtocook.casaveneracion.com/what-is-blanching-and-ho...

Example sentence(s):
  • "PARBOILED cabbage - To PARBOIL, boil a large pot of water, cut off the bottom of the cabbage ... Plunge in boiling water (watch your hands) and then let the leaves sit for a minute and pull out ..."
  • "BLANCHED spinach with olive oil and lemon ."
