I did not see bread and oil as ingredients. Bread is not a common "ingredient" for dishes anyway (save for 2 or 3 traditional recipes). Surely the reference here is describing the bread and oil that is served throughout the restaurant as accompaniments, dressings etc, and possibly used in recipes - i.e. the items that underpin the restaurant being the quality of these basics that are available for all customers. Italy is of course being the country of quality oils and various bread types, both of which are placed on tables during meals for accompaniment.. |
