Italian term or phrase: francesina
I am translating a cookery book from Italian into English and have come across this term 'francesina'. It is part of a process in preparing a dish with stewing beef. It would appear to be a sauce with an onion and tomato base. Is there an English language equivalent?

Francesina (Lesso rifatto con le cipolle)
Un piatto toscano un po' in disuso. Ed è un peccato perché, sebbene si tratti di una ricetta familiare, potrebbe essere inserita nei menù dei ristoranti che propongono i piatti, anche più semplici, della tradizione toscana. In casa non usa più tanto fare il bollito né il brodo (la francesina viene benissimo con le carni "spremute" per farlo!) e quindi questa ricetta non la si incontra più tanto spesso.

È un classico del cucina toscana "rifare", "ripassare" gli avanzi nel pomodoro e la francesina non viene meno a questa usanza, con la differenza della grande abbondanza di cipolla (praticamente il doppio del peso della carne). Forse il nome francesina, oltre ad ingentilire il piatto, viene proprio da questo uso delle cipolle che lo accomuna alla ricetta francese per utilizzare gli avanzi di bollito, il bœuf miroton.
