Italian term or phrase: organizzava ai suoi collaborator
Amava fare scherzo, come lo Zio XXX. Mi raccontava spesso dei periodio passava con lui e degli scherzo che YYY organizzava ai suoi collaborator.

I do not know this expression, but should I assume it is saying: "..jokes that YYY played on his colleagues." ?? (Zio XXX and YYY are not the same people, but Zio XXX is working under the artist YYY).

agree  philgoddard: The grammar is wrong, so it's not clear whether it's one joke or many. "Pranks" is fine too.

pranks he would spring on his colleagues

Explanation:
an alternative to render the particular choice of organizzare

I would definately go with /pranks/ or /practical jokes/ rather than just joke because that would help render the 'organizzare' part.
