suprême(s) Explanation: visto che hai petti prima, bisogna distinguere: o intendono petto intero prima e petto affettato dopo (sarebbe da chiedere al cliente) oppure intendono la parte specifica del petto descritta qui: On confond à tort sous le nom de "suprême" de volaille les appellations telles que "Le blanc de volaille,le flanc, voire l'aile" Or ce petit muscle porte bien son nom, tout comme le "sot-l'y-laisse" Le suprême est un morceau de choix , comme le filet mignon sur le veau par exemple. http://chefsimon.com/supvo.htm |
