Bonjour,

Je cherche la traduction de "pasta soda" dans le contexte fromager. Ici, il s'agit d'un genre de mozarella.
La phrase : "Nella prima fase il latte viene lavorato con il caglio fino a ottenere una pasta soda."

Je sais bien qu'on parle de pâte dure et de pâte molle pour le fromage mais ici, dire pâte dure pour un fromage du type mozzarella me semble incongru. Pourrait-on parler de pâte ferme ? Ou d'autre chose ?

Sa pâte est donc plus ferme et possède une fine croûte lisse. Son goût est également plus salé. Notez enfin que la scarmoza existe aussi en version fumée
