Asker: J'hésite beaucoup parce que, si l'ordre des opérations est respecté, la phase de repos a lieu après la salaison, et non avant. En plus, je suis tombée sur ce site : http://www.galloniprosciutto.it/it/lavorazione/salagione/0/salagione-del-prosciutto-crudo.html où il est question de "la fase di ritiro delle cosce fresche"

Asker: Dans un autre contexte, cela aurait sûrement été parfait, mais j'ai finalement réussi à demander au client, et c'est apparemment la phase de réception de la matière première. Merci beaucoup en tout cas, et laissez votre réponse pour les futures recherches. Bonne journée !
