ho proposto alcuni piatti che hanno colpito gli abitanti dell'isola in modo inaspettato, con prodotti come i fichi secchi alle noci o la neonata al peperoncino, Adesso al ristorante Cafe Calvados sto proponendo alcune mie nuove creazioni come i moscardini leggermente piccanti al pomodoro e olive nere, la triglia ai pistacchi di Bronte e le sciariki con scamorza affumicata, spinaci e gallinacci. Ho inserito anche la baranina ripiena con castagne e mirtilli brasato al Barolo ed il rulet di vitello ripieno con cavolo, funghi, prugne, fichi secchi e noci con salsa speziata, che sono piatti da tagliare in sala per cercare di avere un approccio più diretto con il cliente...e cercherò di mantere questo “contatto”ad ogni cambio stagione nel proporre nuovi menù.
