In ALC it says "filling" for 食べ応え, but that doesn't really make sense to me in this case. What does this mean?

How was the food? - It was extremely satisfying!

You could talk about the texture of the food and how it goes through your throat, but then you end up going away from what the author intended if you try to describe the food. I would change the viewpoint around.

  -> Thanks, Yuki! After posting my initial answer, other words like 舌触り and 歯ごたえ came to my mind for describing 'texture'. 'Satisfying' certainly reflects the experience, which would include flavor, taste, texture, enjoyment, etc. :)
