赤身 and 中とろ Red meat - Centre belly meat Explanation: To the best of my knowledge, there is no real accepted word-for-word translation in English. For 赤身 (akami) it is pretty simple: red meat. For 中とろ it is a bit harder, since it is the middle/centre section of the belly meat, known for its high fat content. Therefore I think that middle/centre belly meat fits the bill. |

赤身 and 中とろ Lean Tuna and Medium Fatty Tuna Explanation: If you go to a sushi restaurant with an English menu, they usually just use the terms "Akami" and "Chutoro". Any direct translation of these terms would be more of a description than an actual translation. Try doing a Google search on "Akami" and "Chutoro", and you'll get lots of hits with varying descriptions/translations, But "lean tuna" and "medium fatty tuna" appear to be the most common.
