Takie "wielkomiejskie" zapachy nie obce były i w samym centrum Białegostoku. Tuż przy ratuszu, na Rynku Kościuszki, w okazałej trzypiętrowej kamienicy pod 29 numerem, była kiszkarnia Alberta Łobzowskiego i Kuleszy. Aby na rano mieć świeży towar, to po nocach odbywało się na podwórzu owej kamienicy "szlamowanie kiszek". "Smród od tego wisiał w powietrzu nad całą tą posesją okropny".

Pig caings are derived from the stomachs, small intestines (pig casings, smalls or rounds), large intestines (caps and middles) and terminal straight end of the large intestines (bungs). Cattle casings are obtained from the oesophagus (weasands), small intestines (rounds or runners), caecum (bungs), large intestines (middles) and urinary bladders. Opis techniczny na >10 stron, ówczesny język i terminologia.

W skład rzeźni wchodzi kiszkarnia - możliwe, że wytwórnia kiszki, czyli kaszanki. Nie wgłębiam się w tekst, proszę sprawdzić samodzielnie.

W każdym razie dla mnie kiszka była i jest synonimem kaszanki - co wiem od mojej babci, która mieszkała w mieście Łodzi. Kilka stron w internecie potwierdza moje informacje. IMO bardzo prawdopodobne, że i w Warszawie, i w Białymstoku wyraz "kiszkarnia" oznaczał dział rzeźni wytwarzający kaszankę - bo dlaczego taki dział miałby się mieścić w innym miejscu, poza rzeźnią?
