disagree  Michał Wiśniewski: It may ALSO include a plan of activities, but it is mainly a route plan. Whereas 'rozkład zajęć' would not even mention the route plan. 'Itinerary' would therefore be misleading since a cruise ship would certainly also have an itinerary

Explanation:
itinerary surely is only about where you're going, isn't it? (cf: itinerant musician) schedule is alright but perhaps just a little too official, timetable also okay, maybe it has a schooly flavour. So I think there are 3 possibiities depending on your taste.
