AFAIK , this term is used the most; just google "secure phone" or "secure telephone" and look at the results. Also, check out the Wikipedia entry under "secure phone"

Tap-proof phone is also a good, descriptive term. However, it's not used nearly as often. If your context is a conversation, then this might work...
