Flowers of wine is easy to detect and identify. It first appears as a number of discrete whitish patches on the surface of the wine. These islands of film yeast gradually increase in size until eventually coalesce to form a rather delicate grey-white wrinkled skin or pellicle which completely covers the surface of the wine.
Relatively light wines are also more liable to infection than stronger wines.

Flowers of wine: it is caused by an organism like yeast, mycoderma (...) and is usually the result of admitting too much air to the fermenting vessel;
