This is an agri-context - which made me wonder whether dehydration might not be literally right. Shrinkage might be OK if prefixed with crop. Having worked in well-known department stores in London, I am all too aware of the negative - employee theft of goods - connotation of 'stock shrinkage'. Example sentence(s):
