In Brazilian Portuguese food texts, Carolinas are a rather popular dessert filled with chocolate ganache or dulce de leche, for example. Specifically in the Asker's text, though, they are filled withsome codfish, bacalhau, preparation. Originally, Carolinas were made with pâte à choux (a useful preparation like bechamel sauce), which is also used to make eclairs, for example.
