Merriam-Webster, which I quoted, is a U.S. dictionary. I was taught to accept any word that appears in the unabridged Merriam-Webster.

it seems rector is not used in reference to US or UK universities, only in reference to foreign universities. If we want to use the same term they use in reference for their own universities, we should not use rector. President for US or Chancellor for UK are good options. Rector, otherwise, not a really good one.

The dean is head of studies in a discipline or school within a university. If it's a university, the top guy is not a dean. See Merriam Webster definition:
