I merely offered a translation that seems most accessible to an English-speaking diner. Perhaps he/she could ask the waiter for a description of the dish.

Explanation:
Julienne означает способ нарезки тонкой соломкой или суп-жульен.
В случае русского жульена имеется в виду блюдо, запеченное в кокотнице в сметанном или сливочном соусе под сыром.
Поэтому предлагаю самый близкий, на мой взгляд, вариант - crab en cocotte или crab cocotte. Если у вас есть боле подробное описание блюда, можно попробовать найти что-то более конкретное.

1) a vegetable cut into thin strips (usually used as a garnish)
2) a clear soup garnished with julienne vegetables
3) cut into long thin strips; "julienne the potatoes"

  -> baked crab - слишком конкретно, вдруг там крабовые палочки в сметане :) аудитория может обидеться :) А если серьезно, то в качестве общего перевода термина я пока лучше ничего не нашла. Если бы было описание блюда, можно было бы что-то еще придумать.
