agree  Yakov Tomara: In Russia "kharcho" usually stands for spicy mutton soup with rice. Perhaps the original Georgian recipe was distorted, it's quite probable :-)

There are many, many \"foreign\" dishes that keep their name - spaghetti, chow mein, pirogi, taco, etc., etc.. I wouldn\'t be afraid to use \"kharcho\" (there are several hundred hits in Google) with perhaps a parenthetical brief explanation. As a translator, remember every word does not have an equivalent in another language and it\'s a waste of time to try to find one. Use the original and explain it, if necessary.

I\'m from Georgia, too, Georgia, USA that is! Never heard of kharcho here, but if we had that dish we would make it out of road-kill opposum, plentiful and tasty (if the vultures didn\'t get to them first!)

From Google:

agree  kire (X): I agree with "kharcho", but the original recipe is still mutton, not beef. Though I guess both are good :)
15 mins
-> Thanks, Kire. I'm sure, as you say, both are good, but see note Added (from Goggle)

agree  Yakov Tomara: I'm more familiar with the 'mutton' version but maybe both are far from the original Georgian recipe :-)

Spicy Georgian Kharcho Soup with Walnut

Explanation:
