I never met "escorting" when I was sailing. Icebreakers were always "assisting" us.
"Piloting" may also mean "guiding or showing course" but not actual help (physically) to break ice for a vessel to proceed.

Escorting - proceeding alongside being able to assist or to protect when required

This is as I see it in English (as a graduate of a shipping academy since 1982)
