All I've come up with is something to do with thinning, but if they are revegetating, I'm not sure why they would want to thin out the grasses.

"Thinned" or "thinned out": either. I think this must be what it means. The "entresaca" is thinning trees in forest areas, and then they replant the cleared land with grass for pasture. This is one way of creating forest pasture (the other is planting trees on open pasture). "Entresaca" commonly applies to thinning trees.
