I think Phoenix might have the solution. Your definition would read: "Fanning: Method used to determine crispness and firmness of the paper" "Cartear" means to leaf through or rifle.

The glossary term is not flawed. In English they also talk of the sound of the paper as you wave it in the air, to have a crisp sound: https://www.bde.es/f/webbde/Secciones/Publicaciones/Informes...

But it may be afterall that there is no single equivalent term in English for it. Thanks for checking.

I still think the definition in your glossary is flawed. It's not the sound and feel of any just any old piece of paper, it's that of a real banknote that's in good condition. What do you think of "crispness"?

Based on the definition given, all I can think of is "sound and feel", which is a circular statement. It just doesn't seem like a concept that would need a word of its own.
I found your text online, and this is the only mention of the word. Have you found evidence elsewhere that it's an industry term? If so, can you give us any examples?

The term is a technical term and is correct along with its meaning given in Spanish, as is used in the industry. "Stiffness" is only one element or characteristic of what comprises the "carteo" of paper banknotes.
