Spanish term or phrase: bocas.... lagos abiertos
In a discussion about winemaking, the follow phrase appears: "...los depósitos tienen bocas muy amplias para imitar la tradicional elaboraciíón en lagos abietos."

I am at a total loss. Obvioiusly the tanks have wide openings, but is there a specific term for this? And I am aso guessing that "open lakes" isn't appropriate either.

I'd really appreciate any guidance you can offer.

Explanation:
My wife had a huge bodega in her house in Navarraand she says the 'lagos' were where the crushed grape juice went, where it settled; then was piped to 'cisternas', where it fermented.
