Es geht hier um die Herstellung von "Cecina", also Trockenfleisch vom Rind. Dafür werden vier Teile des Rindes verwendet:

Se utilizan cuatro partes o cortes de los cuartos traseros seleccionados de la vaca: Tapa (Oberschale), Babilla (Kugel), Contra (?) y Cadera (Hüfte).

Ich habe erst "Frikandeau" gefunden, es sieht aber so aus, als bezöge sich der Begriff auf den Teil nur beim Kalb, nicht aber beim ausgewachsenen Rind.
