FYI, straight from the NL-En dico, a doorloper is a Frisian safety speed-skate (ice skate) or a \"Mephisto puzzel\". (?)

I suspect this may be your answer. I've been a bartender in the states and in NL but I've never heard of a doorloper.
The logic with tall glasses is that it lasts longer. The first webstite may be interesting the rest are from google searching for 'glass glossary' or variations with: bar, drinking etc.
