... the amount of times that someone has suddenly turned around to me, demanding the translation of a certain word or phrase in English/Dutch/Hebrew, and instantly wiping my mind blank!

Translators are not dictionairies is definitely true. Translators bridge worlds and cultures is also true. Having a faible for truth, I like all of these.
Yet, the best one is missing: Translators are not machines but human beings, fast, accurate, very reliable, and, best of all, they don't fall for "semi-matches" that make no sense at all.

To continue Thayenga's train of thought:
Translator's are sometimes considered walking dictionaries; some are also walking (specialist) encyclopaedias. Most defy definition simply because as sentient beings their intangible mix of knowledge, careful thought, intuition and inspiration is never the same on any given day nor for any given text.

I nominate Allison's definition (heh) as the best:

The ideas of "bridging cultures" and "bridging worlds" are quite artistic, but they do not explain the real value of translators. I voted for "are not dictionaries" because while blunt, it explains why the profession exists at all when there are dictionaries and machine translation systems out there. Allison combines the truth and the art with her motto "defy definition" as in fact, translators do every day.
