atheromatous plague with lipid core

Agree with xianghai. Plaque is perhaps used slightly more often in describing atheromatous lesions. By definition, an atheromatous plague has a core of lipid-laden macrophages and a fibrous cap, so 粥糜样含脂病灶 is a descriptive way of translating "atheromatous plague" into Chinese.
