Sabor: Aceites gustosos (medianamente amargos, picantes y astringentes) y muy aromáticos (ricos en aromas secundarios, de tipo verde) , sabor frutado al principio de la campaña y ligeramente dulce a medida que ésta avanza.

The English version that I have says "rich in secondary, green flavourings", but I have no idea what "green" or verde" might mean in this context. Do they mean something fresh? related to grass or leaves?

My actual target language is Latvian, but given the "huge" number of ES-LV translators, I have no choise but to resort to English. :)

The other question that begs to be asked is whether the source document (English version) is the original version or is it a translation from another language, which may account for a poor translation "rich in secondary, green flavourings"??? Question?

I've found the following in Portuguese (it's not about olives, though):
O aroma verde ou as notas que o compoem fazem lembrar o frescor
de capim recém-cortado. No caso de mangas, a nota verde mais típica
lembra o odor de uma folha de mangueira recém-esmigalhada.

I wonder if this could be useful...
