Il significato è mantenere la quota allo stesso livello (ad esempio 17000ft), in gergo si usa "mantieni il livello", "cambia il livello" o un questo caso come aggettivo "livellato"(restare in volo livellato) o mantenere il livello, ma credo sia più riferito all'assetto livellato.
