This seems to be the shortest way of saying it, esp. in the context of psychology.

neutral jaanisel (X) : If a short term is needed, zinātkārs is OK. If the text needs a slightly brighter colouring with a stress on that hunger, I would opt for zināšanu kārs.

This version is conversion of the phrase into closest Latvian equivalent.
More common is the related Nominative form "zināšanu slāpes" ("hunger for knowledge"). But both are very context sensible. I would not use either outside educational or literary context.
If it will be used in more aggressive advertisement environment, it could be translated as "Gribi zināt vairāk?!" ("Wanna know more?!") or something of the like.
