Personally, I prefer the second option, as it sounds more natural -and also because I love Nigel Slater and trust his food writing, as in the reference above- but it will depend on your context.
For example, it might also refer to the cake "sinking" in the oven as well. Depends on the cake. More likely with souffles and such, but also very common with light cakes.
In this last case, a more appropriate option might be "so that/in order to ensure that the cake does not sink in the oven".Hope that helps.
