The XXX Bakery Systems extruder consists of two different devices that are commonly mated together – a low-pressure extrusion system and a high-speed band cutter assembly. Together these units transform batches of dough into a specific cut shape. The low-pressure extruder forces the dough through cut outs on various die plates and the bandcutter slices the extruded dough into shapes of a specified thickness and weight.
