'vetrinary hygeinist' would be a qualified vetrinarians' assistant (like a dental hygeinist is a dentist's assistant)

what does the job description contain? I'm trying to eliminate the chance this could translate as 'hygeinist', instead of 'public health'??

agree Muriel Vasconcellos : As my colleague says, used by WHO, PAHO, etc. BTW, public health veterinarians, of whom I know several, take themselves very seriously and don't use the abbreviated term "vet".

I would capitalize the first letter of each word, like this:

neutral Muriel Vasconcellos : Sorry, Mary. It has almost nothing to do with "sanitation" per se. In this context "sanitario" means 'public health' in English. Veterinary public health is about animal health as it affects the human food supply - e.g., vaccines, etc.

Yes, I realized that after doing some more research about it. When I saw the word "sanitarista", sanitation was the first thing that came to mind and I did find some references online as you can see above. Thanks and have a great evening!
