: not convinced about either face-to-face, as a telephone meeting/interview might also be an option, or one-on-one, as interviews often involve more than 2 people

I think constructions like 'should you wish' are a bit too laid back for this context, as the whole point is that writer is trying to persuade the reader to meet him.
Presenting the possibility of hiring him as an 'opportunity' for the reader aims to strike a positive and confident note.
This formulation also leaves open the type of meeting that may take place.
This may not be the most directly literal equivalent option, but IMHO it should work.

should you wish to take my application further
In the English speaking world, and probably the Italian speaking world too, this is a badly written CV because it is far too long and wordy. Even if the selector has only a dozen (rather than perhaps a hundred or a thousand) CVs to read, this is going to irritate her/him. To paraphrase Cicero, "I'm sorry I wrote you such a long CV, but I didn't have time to write a shorter one".
A more successful CV would probably just omit this as totally unnecessary, nobody makes a job application, but is not available for an "incontro nei tempi e modalità a Voi più convenienti".
Basically, if this is how he writes his CV, who knows how long it will take him to get a ship underway ;-).
