Italian term

peperonata

grazie grazie

stewed bell peppers

If you say "stewed peppers", it turns into anything but peperonata. I've seen both used, depending on the audience. If this is a "specialist" text, then you could leave the term in Italian (but maybe a translation in parenthesis would be good), if it's for a general public then translate!
At least to non-Italians, getting the reader to actually understand what you're talking about is imperative...

neutral Hege Jakobsen Lepri : I wouldn't trust anyone who claims that peperonata should be served over pasta ;-)

You are wrong! Even if I live in Milan, we often prepare "peperonata" and we use it also with spaghetti or other kind of pasta. You should try it!
