I know that "a la llauna" is cooked in the oven, in a spicy sauce. "A la brutesca" is similar but I would like some ideas on how to put it. I've kept the Spanish "a la brutesca" in italics and want to put something in brackets.

Some options. "A la brutesca" snails are placed face down on a layer of salt and either roasted or grilled in the pan or even cooked using other burning material such as straw, as in some cases I have found online.
You could also say something like "pan-roasted" but it depends, of course, on whether you know exactly how these are going to be prepared. If you don't know, then perhaps something general will work best.

I would say "in salt crust", as "in crust" is quite common with recipes baked in oven, where an ingredient forms a crust (cheese, salt).
