those - к фразе: "all that kind of stuff helps, but the word of mouth is like …", т.е. он хочет сказать, что по опыту их обоих, неформальные, устные рекомендации ценнее чем что-ибо иное, включая "articles in magazines and books and things".

: "Those", как мне кажется, относится к "articles in magazines and books and things". А кстати, может быть и просто оговоркой. В США диву даюсь, как легко многие местные путают окончания глаголов, числа и т.д.

Думаю, это статьи и устные рекомендации с описанием нашего опыта.
both - относится именно к двум видам рекламы: статьи и рекомендации, а не к опыту каких-то двух из четырех собеседников. Если бы речь шла об опыте двух из них, выражение было бы: the experiences of both of us.
