Brewery shop
In this particular context you could say that the brewery has opened its own shop:
"As well as its delivery service, the XX brewery has opened a shop at the Exhibition Centre East, opposite hall 8, which sells beer, lemonades, fruit juices, Pago juice and mineral water."

: When the sentence is as you wrote it, as this isn't only a brewery shop, but the brewery has opened a shop.

self-service depot/market
Your solution is just fine, Martina - here's an alternative
I don't think you need to repeat the "drinks" since it's obvious.

: A cash & carry is something entirely different - a Großhandelmarkt like Metro!

collect-your-own drinks store
I would use this in the context given. Although not an established term per se, this makes a nice contrast to the delivery service previously mentioned. Exhibitors can either have drinks delivered or collect their own.
"As well as their delivery service, Brewery XX has now opened a collect-your-own drinks store..... providing (or selling, NOT OFFERING) beer, lemonade, fruit juices etc."

: No, sorry, that just doesn't sound English. Also, "selling" or "which sells", not "providing".

shop / store
Ich würde es einfach und neutral halten, insbesondere da wahrscheinlich mehr Wasser als Bier verkauft wird...
Vielleicht "outlet shop"
Außerdem würde ich sagen "the brewery is operating a shop" anstelle "opened", da es wohl weniger eine Geschäftseröffnung ist, sondern nur für die Messe betrieben wird.

Bottle shop
The brewery also operates a bottle shop within the fairgrounds, where an assortment of beers and soft drinks are available.
Example sentence:
The brewery operates a bottle shop where an assortment of beers and soft drinks are sold.
