DLT - Dulse, Lettuce and Tomato - and mediterranean Dulse sandwich

Dulse is probably the easiest seaweed to acquire a taste for. Fried quickly in hot oil, it is crisp and salty, kind of like bacon only better. It is very addicting.

The first sandwich here changes the classic BLT and replaces the bacon with fried crispy dulse. If you used to like BLT you will probably love DLT and end up preferring them.

The second sandwich gives ideas for using dulse in pita bread with vegetables.

dulse, a bunch
canola or other oil for frying

bread or toast
sliced tomato
lettuce, preferably romaine or another heavier one.
mayo or other preferred sandwich spread garnish.

OR...

pita bread
vegies - tomato, scallions, lettuce, cucumber..
Tahini sauce or hummus (see recipes).

Heat a fair amount of oil in a small skillet on medium-high - you are going to do a kind of shallow deep-fry rather than saute. Separate and smooth out the dulse, which often gets bunched up in its packaging. When the oil is hot, add a piece or two of dulse - you will know the oil is hot enough, when the soft purple dulse sizzles and turns a crispy khaki green in about 2-3 seconds. Remove the crispy dulse to a plate with a paper towel to drain. Repeat with the remaining dulse.

Assemble sandwiches. Eat. Make more. Repeat. "
