I assume that "servant" stands for "stable boy". Look at the links 1 and 2 (Section 76) and sentence below...
"... The stable boys were just watering the horses for the night, and it was quite as much as they could do to attend to that..."

Не знам за какво БАН-ско издание говорите, нито съм учила подобно нещо, напротив. Ето ви ги и правилата (в случай че не Ви попадне по-нов учебник по граматика): Определителният член -ят (-я) се използва при съществителни имена с деятелни наставки -ар (-яр) и -тел: напр. овчар-ят, вратар-ят, потребител-ят, учител-ят.
С -ят (-я) се членуват и съществителни имена от мъжки род, единствено число, завършващи на -й: краят, героят, както и следните съществителни: зет –зетят, лакът - лакътят, нокът – нокътят и др.
Колкото до "to water" - със сигурност означава "поя" (животно) - независимо от тая нелепица с френския превод: http://oxforddictionaries.com/definition/water?q=water
И още нещо - конярЯТ, не конярЪТ. :)
