This comes from the following extract, last sentence:
Antes del proyecto las familias ganaderas enfrentaban diversos problemas: tenían un restringido acceso a recursos productivos, aplicaban escasamente técnicas de alimentación, sanidad y selección de ganado debido a la limitada disponibilidad de proveedores de asistencia técnica, y no contaban con infraestructura adecuada para optimizar la crianza y engorde de sus animales.Como consecuencia de ello, el incremento diario de peso vivo del ganado era mínimo, y el tiempo para la saca se extendía a más de un año.
I've taken 'saca' to be a general term referring to 'the entire process' of fattening, but I'm not sure whether there would be a specific term for this.

I've taken 'saca' to be a general term referring to 'the entire process' of fattening, but I'm not sure whether there would be a specific term for this.

I do not know if there is a term, but in my opinion this is what it means and this can help you find a "word" for it if you don´t want to use the whole thing. ¡Buena suerte!

time for removal for sale or for breeding
It sounds like it has been taking and extra year until the time the livestock are ready for sale or slaughter, due to poor conditions. In the link below, I found the phrase: "fecha de la saca (de venta o como reproductor)" which could mean date of removal for sale or for use in breeding. That's my guess. Some of the other answers so far seem to be in this area.
