".. der Auftraggeber muss den Auftrag innerhalb 3 Arbeitstagen ab Eingang ebenfalls bestätigen oder innerhalb dieser Frist schriftlich abweisen (z.B. bei Abweisung der Versicherung).
Would rejection of insurance be correct here? I assume that in such a case an insurer would refuse to cover the delivery.

That is different I think than a refusal to insure- I asked the same Q of an insurance company last year. There had been flooding in my estate ...

If the phrase were just "Abweisung der Versicherung", I would say "Denial of (insurance) cover" which is the standard term used in association with health insurance coverage denial letters in the USA (due, for example, to pre-existing conditions).
In this case, it looks like the insurance relates to whatever is being delivered, thus I would use the above phrase, or perhaps "should the insurance application be rejected".
