"La reja del ascensor tenía flores con cáliz dorado y follajes rizados de fierro negro, donde se enganchan los ojos cuando uno está triste viendo desenvolverse, hipnotizados por las grandes serpientes, los cables del ascensor."

unwind / uncoil

Lift cables wind themselves round large drums as the lift rises, and unwind as the lift descends. The meaning of "desenvolver" here is DRAE definition 2: "Extender lo enrollado".

"viendo desenvolverse [...] los cables del ascensor" means "watching the lift cables unwind"; "hipnotizados por las grandes serpientes", referring to the observer's eyes, has been inserted in the middle. The cables are like coiled snakes. I sort of understand what the writer means here: watching a lift is hypnotic.

Come to think of it, "uncoil" would be particularly suitable here; it fits in well with the reference to snakes.
