Trabajo habitualmente en congresos de audiología y el texto que has puesto se refiere a cómo educar al paciente para que haga el mejor uso posible de su audífono. Hay que explicarles que el mero hecho de llevar puesto un audífono no van a entender todo perfectamente al instante, sino que tienen que aprender a "entender" los distintos estímulos que oyen, y para eso se les ponen diferentes estímulos para que vayan acostumbrándose: grabaciones de voz, voz en directo, conversaciones con ruido de fondo, sonidos aislados, etc.

When a hearing aid is being introduced to the patient you are trying to have them have realistic expectations. You demonstrate to them initially by using sounds of various wave lengths as the source of the stimuli. Some models will have cut offs at higher levels of frequency, and some at lower. THEN you switch the stimulus to that of a human voice - that is what is meant by "change the stimulus to live voice".
