I like "bread roll" but you could also consider "bun" since that's exactly what a bollo is: a round bread similar to a hamburger bun (but slightly sweeter). I've never heard of a sweet bollo, i.e., as a pastry, at least not here in Mexico. Bollos are known as "teleras" in Central Mexico, if that helps.

"bollo" is a lump of dough.
The bun is the result after it has been cooked. From this context it's clear that they are talking about cutting up the dough to make the buns.
