salderen is the verb of a much more used noun "saldo" which means total or balance. It can be used in all applications from accounting to a simple cash register receipt.

income less expenses/revenue less costs/proceeds net of costs

Without more background information I cannot give you a more precise translation. One of the three options given should be appropriate, depending on the context. As far as I know the only translation for the verb "salderen" in English would be "netting off" or "setting off", but I don't think that would be an improvement on the options given.

balance

The Dutch dictionary gives "to close" as a synonym for salderen. I guess it just means "to balance" or "to strike the balance"
