I've spent a long time searching now but can find no reference to anything where ship's officers accompany/escort guests anywhere. Does anyone have any idea?

would be the obvious.
Just guessing, but ship officers doubling as escorts for unattached ladies at some of the "gala receptions".

agree Adrian MM. (X) : very likely in that string. But, beware, my inside informants tell me that, traditionally, it is very old ladies and ancient 'battle axes' - bulldogs with a wasp in the mouth - looking for male, uniformed companionship.

a visit to the ship's bridge

Back on board, the evening begins with an informative cooking demonstration, followed by a visit to the ship's bridge and engine room, a barbecue buffet and again some squid fishing.

Some of the behind-the-scenes tours include the laundry and the kitchens. I hardly think an officer would be delegated to those duties. This is surely about watching the captain and the officers at work on the bridge.

I think the clue is in this lead-in. A visit to the ship's bridge is a 'classic' treat, whereas a full tour (engine room and all) is a more recent innovation.
