Ένα είναι το 'practical' και άλλο το 'practicals'. Το 'practical', εδώ ΔΕΝ πάει, διοτι προσδιορίζει το 'Supervisor'. You can say, 'a practical action/activity/man' referring to the 'action/activity/man'. Definitely, 'πράξης', εδώ, είναι 'activity'.
Yes, the Oxford Dictionary refers to,
'.....practical applications of the research’= the applications are practical
'‘a practical, stylish kitchen’'= the kitchen is practical
'‘Steve'll fix it—he's quite practical’= Steve is practical

'practical describes, 'application'/ Kitchen/Steve,
AND in your case, 'the supervisor'.
Now, in this instance there was an 'activity' by the Student and the Supervisor oversees it. Take your pick, between 'overseer' and 'supervisor', which, again are two different things. What is 'Supervise' and what is 'oversee'?

' πράξης ', in English has different variations, such as 'practice/action/ activity etc', whereas in Greek is (might be) a blanket word for an activity/ action practice
'Practical' is an adjective describing the noun 'supervisor', as used, whereas,
' πράξης ' is an activity by a Student and the Supervisor is just overseeing it/supervising it.
As said, one can say 'the practice/ activity/action supervisor', which then describes that some sort of practice/activity/action is going on, which is supervised by somebody, and not that the 'Supervisor' is practical in him/herself.

disagree transphy : The correct term should be 'practice supervisor'. 'Practical' is an adjective describing the supervisor. 'Activity', between a tutor and a Student is more appropriate, in this case. See discussion.
